    I hate to give this one away as it is my one of my secret weapons, but here goes:

    Kickin' Thai Style Beef Salad  

    What you need:

    2 lb. Beef Rump Roast or similar piece of good beef

     

    Rub for the Beef:

     

    3 Tblspn of Thai Red Curry Paste

    1/4 cup of Olive Oil

    1 Tablespoon of Soy Sauce

    1 Tablespoon of Brown Sugar

     

     

    For the Salad:  

    Mixed Greens (I enjoy getting a couple bagged salads that I like and then adding some rocket etc.)

    1 English Cucumber seed and sliced thick into nice half moon shapes.  (I like to leave the skin on but                that is a personal preference. )

    1/2 of a med. Sweet Onion sliced thin

    1/4 cup mint leaves slightly chopped or hand torn

     

    For the Sauce:

     

    1/4 cup Fish Sauce

    1/4 cup Lime Juice

    1-2 Tblspn. of Dark Sweet Soy Sauce

    3 Tablespoon of minced Garlic

    3 Tablespoon. of minced Ginger

    3 Tablespoon. of chopped Cilantro (stems included)

    1/4 cup of chopped Green Onions

    1/4 cup chopped Shallots

    1 Teaspoon of Brown Sugar (optional)

    1 pint of Grape Tomatoes Halved (so the juices run into sauce)

    2-4 Serrano or Thai chilis sliced thin  (less or more depending on how hot you want it)

    1 Teaspoon of Sirachi hot sauce (optional but I like the extra kick)

     

     

    Here is what you do.  First get your grill or oven going at 325 degrees.  I prefer the flavor of the grill but to each is own or it may be raining.  Combine the rub ingredients and rub it all over the beef.  Let the beef get to room temp before putting in oven so that it cooks nice and even.  Cook at 325 till med. rare or med. depending on your taste.  About 150 degrees in center for me.  Remove from cooking device and let rest for at least ten minutes before cutting.  Once rested slice it thin against the grain for some of the best tasting beef known to the free world.  Add the beef in with the Sauce to coat evenly.  Speaking of the Sauce all you have to do is combine all of those ingredients for extreme epicness.  Also combine the salad ingredients.  Hopefully you would have known to do that anyway.  If not, the kitchen may not be the place for you. :-)  

     

    To Serve:

     

    Put your salad on a nice plate.  Lay some thin slices of beef across the top and spoon some of the sauce with all the goodies over the top and then eat up.  Your gonna love it.  I promise.  I enjoy it with a nice Tiger Beer and chopsticks.  A side of rice is good but not my thing.  Also if you want to take it to whole other level there is a dipping sauce for the salad that I make sometimes.  It is equal parts soy sauce, worcestershire sauce, hot mustard, and fish sauce.  Its awesome......
